Bethany Beach 2014 Recap – Day 5 – Sea Colony and a Vegetable Win

My Uncle Mark and Aunt Denise were staying at a Condo at Sea Colony. On Wednesday, July 30th they invited us to spend the morning with them at the pool and other Sea Colony facilities. My cousin’s daughter, Mya, joined us.

Sea Colony’s great and I am seriously considering staying there in future years. They have pools, walking trails, tennis courts, playgrounds, and a fitness center. I really enjoyed my time there.

Sagan was a little weary about the pool, but we did get some smiles out of him. He also obliged me while I carried him around the “big pool” for a while and showed him the filters that picked up all the trash and bugs in the water.

Ultimately though, Sagan preferred to be on land. Mya asked him to give her a massage and to my surprise, Sagan started kneading her shoulders. Where did he learn to do that?

Dyson is fearless and enjoyed the kiddie pool. He liked feeling empowered and climbing in and out of the pool himself.

Once everyone was tired of the pool, we decided to hit one of the nearby playgrounds which was a big hit.

And after the playground, it was lunch time. We headed back to Uncle Mark and Aunt Denise’s condo for PIZZA!!!! Everyone loved that.

Traction at the Beach
In the afternoon, I took the kids down to the beach. No trauma or tears this day. For the most part, we just stayed up in the sand. I did take Sagan down briefly to kick the waves and to pretend jump them. I didn’t push it though and we quickly returned back to play in the sand. I took a bunch of pictures with my phone so Ryan could see Sagan was actually playing and smiling at the beach. 🙂

Joint Nap– AGAIN!
The pool and the beach wore the kids out. I was pleasantly surprised that Sagan and Dyson napped at the same time AGAIN! They never do that at home, but it kept happening at the beach. One of the best parts of the vacation. : )

Chinese Food and a Great Compliment!
We were so close to having pizza TWICE in one day, a notion I have to confess I was somewhat excited about (Hey, I’m on vacation!). It was pointed out that we had pizza for lunch so we got Chinese Food instead. It wasn’t pizza, but hey, it’s a good option as well.

Sagan, Dyson, and I ate outside on the deck. I like eating outside and without dogs to clean up the aftermath (think rice strewn EVERYWHERE), strategically it makes better sense. Sagan amused me by asking for tofu. When we get Chinese Food at home, I get a Tofu General Tso’s which Sagan typically eats half of. Luckily, he’s a big fan of chicken as well.

I alternated handing my two boys pieces of broccoli, peas, rice, and chicken. Everything was delicious, so the kids were devouring away.

And then I got the BEST compliment.

“He’s a miracle,” My Aunt Denise observed as Sagan swallowed some more peas, “Usually kids won’t eat vegetables.”

That totally made my day… as vegetables are near and dear to my heart. I did have to confess, however, that there are days where Sagan will only eat chicken nuggets and fries. We have good days and bad days. I LOVE that Denise happened to be sitting next to us on a good day. The compliment STILL makes me happy.

After dinner, Sagan had a fabulous time playing with all the cousins…and eating an unknown amount of fortune cookies. I don’t know how many, but I am pretty sure it was a lot. I don’t think Aunt Denise noticed, because she didn’t retract her “miracle” statement. : )

Custard
I discovered walking for Frozen Custard after dinner was significantly easier when Ryan was around. It was tricky keeping Sagan situated with his napkin demands (he hates when things spill on him, even if it is delicious melted ice cream) and trying not to drop Dyson whose center of gravity was making dramatic shifts as he kept trying to dive-bomb my chest. Stress level, I think it was probably the second most flustering moment at the beach, but it all worked out.

We took early leave from Dickey’s which put us back at the beach house before everyone else. And SHEBAM! Another easy and pleasant night night time. The kids went right to sleep AGAIN! Our beach sleep schedule RULED!

[A Working Mom’s Half-Ass] Homemade Cadbury Crème Eggs

Two years in a row, my sister has sent me a link to an Instructables article on how to make homemade Cadbury Cream Eggs.

It’s interesting what a difference a year makes. Last year with an eight month old, I took one look at the images of the egg-shaped chocolate molds and thought, “No way.”

This year, maybe it’s because I’m getting more sleep now… or maybe I have finally learned the necessity of keeping extracurricular endeavors like this simple. Either way, I looked over that article and I thought, “Hey, I can half-ass this! I’ll just dip the eggs in chocolate like we do Oreos or truffles.” (which the Instructables article actually covers on Step 5 – Alternative Method)

So this morning before work, Sagan supervised and did an extensive inspection of the food coloring while I mixed up the filling. We had to improvise some of the ingredients. The biggest thing was we ran out of confectioner’s sugar, so we substituted the last cup of sugar with 3/4 cup whole wheat flour (which considering how sweet our filling turned out to be, I don’t think it really needed that extra cup sugar after all). Also I always double vanilla. I like vanilla. : )

Original Recipe Vicky/Sagan Version
1/2 cup light corn syrup 1/2 cup light corn syrup
1/4 cup butter, room temperature 1/4 cup butter, softened in microwave
3 cups confectioner’s powdered sugar (icing sugar) 2 cups confectioner’s sugar
3/4 cup whole wheat flour
1 teaspoon vanilla 2 teaspoons vanilla
1/4 teaspoon salt Whoops forgot this part
yellow food coloring We used neon green and purple food coloring. : )
1 (12 ounce) bag milk chocolate chips Whatever scraps of melting chocolate and chocolate chips my Mom and I were able to scrounge out of the pantry. : )

The filling got a nice long session with the refrigerator during our work day. After work, as dinner cooked, rolled up our filling into the requisite little balls which got to go back into the fridge while we ate.

Then after supper, we took a bowl, melted up some dipping chocolate and chocolate chips in the microwave, dipped those suckers in, plopped them on wax paper, and threw them back into the fridge.

Roughly ten minutes later, we were enjoying our homemade Cadbury Crème Eggs. Really all and all, it was little effort and the pay off was delicious. My husband used the word “magic” and joked that he expected “Cadbury to bust down the door and arrest us for patent infringement”.

And no one seemed to mind that they weren’t perfectly shaped eggs from chocolate molds… particularly not Sagan. : )

Some Things That Did Not Get Blogged About in 2011

Well, goodbye 2011! I’ve seen a number of blogs highlight their favorite posts of the year. I’m going to highlight some of the forgotten posts– the ones I never got around to writing. 🙂

Billy Goat Trail – A Return Trip

My Birthday Hike this year was on Maryland’s Billy Goat Trail along the Potomac River. Ryan and I thought it would be fun to do a group hike on that trail. As luck would have it, my friend Greg Z organized a group hike that following month. The weather was sketchy at first and we did have to wait out a storm under a bridge, but after that we had the trail almost all to ourselves.

My favorite part– my friend Greg Z told me when some of the people in the group were struggling on the rocks, he watched me get further and further ahead. Apparently he pointed and said, “THAT’s the one that’s pregnant.”

We walked the trail the opposite direction Ryan and I took in March. It was nice to see the trail from a different perspective. Also since it was a month later, we got to see wildflowers bloom!

A Most Pleasant Day

Mother’s Day Weekend, Ryan and I went down to visit our old neighborhood in Elizabeth City. We shared honeysuckle in our yard with some of the neighborhood kids. When Ryan went to shake Khalif’s hand, Khalif would have none of it.

“Nah, man.” Khalif said, “We hug.” And so they did. I believe that was our first neighborhood kid hug.

I was six months pregnant at the time and some of the kids marveled at how fat I was.

“It’s only temporary,” Ryan chimed in. Then when the subject came up again, “The pounds are going to just melt off.” Although he directed his statements to the kids, I know who his real target audience was! He was making sure his wife kept her self esteem in tact. : )

We went by Earth 383 for Free Comic Book Day. A number of the neighborhood kids joined us and Ryan organized a large game of RoboRally.

One family wasn’t present, so the dogs and I walked over to their new home. When I was still a block away, the youngest kids spotted us and started shouting out my name. They ran inside and their older siblings emerged. The 17-year old son who always seemed somewhat indifferent, came running out with the biggest smile and hugged me in the middle of the street. I spent the remainder of our time in Elizabeth City visiting with that family.

The next stop was Ryan’s parent’s house in Virginia Beach. When we returned home, I went swimming in the lake behind their house with my sister-in-law and her fiance. The water was the perfect temperature and it was so pleasant and relaxing to be swimming by manicured back yards along side of ducks and seagulls.

We finished our day with a big family dinner at a local Vietnamese restaurant. There, I got my very first Mother’s Day card… that Ryan had secretly gotten his relatives to sign. It was a great day from start to finish.

In May, Ryan and I got to visit the New York Botanical Gardens and the Brooklyn Botanical Gardens. That was just an added bonus though. We were really in New York to watch my sister-in-law test for her black belt in Shao-Lin. All the forms she and her classmates had to remember and execute was simply awe-inspiring. That afternoon also brought me the worst heartburn of my entire pregnancy courtesy of a “Magic Bar” I bought as a concession. I still made it through the entire gestation period Tums-Free.

In May, Ryan and I visited Seattle. Our outings were blogged about except the Seattle Bug Safari. We very much enjoyed our visit there. The employee working that day was extremely friendly and informative. You could also see that they take their Yelp reviews seriously. One of the reviews indicated that people were getting confused and thinking the Gift Shop was the extent of the business. When we arrived, there were signs making it clear the Bug Zoo was in the back.

My family held our annual Black Friday Cookie Decorating again this year. Although we were late on the invites, it was heavily attended. When all the sugar cookies got decorated, some enterprising young girls started to decorate the other variety of cookies. Sagan also decorated his first cookie (with Daddy’s help).

In December, Ryan started playing Skyrim. The scenery in that game is amazing and Ryan found all the walking in the game made him want to get out and do a real hike. So on December 3rd, our family took on a one way trip along the Bull Run Occoquan Trail. We traveled 7.5 miles from Bull Run Regional Park to Hemlock Overlook. This section may not have been as scenic as Skyrim, but it was still gorgeous in its own right. You walk along the water, get to see some rapids, pass by a memorial pet rock pile and see some neat trees along the way. This outing was Sagan’s longest hike to date (post birth).

Thanksgiving and Pigging Out

Happy Thanksgiving!

Today Ryan and I will be spending the day with extended family in Silver Spring, Maryland. Last time we spend the holiday there, in 2008, there was a convenient scale in the living room. We weighed ourselves right before the meal… and then we weighed ourselves again after ingesting numerous helpings of delicious turkey, stuffing and that decadent sweet potato casserole I’d still trade my sanity for.

The data collection made for some interesting banter, but that’s about all we used it for. We didn’t step back and reflect, “Hmmm… what are the evolutionary implications of gorging oneself?”

National Evolutionary Synthesis Center (NESCent) is doing a blogging competition where the prize is a travel grant to Science Online 2011 conference (which Ryan and I are attending). One of the entries tackles a topic that I found very fitting for today’s festivities. Enjoy!

Wedding – Cake

I may be intimidated by the likes of linens and flowers. But there is one thing I can get very enthusiastic about wedding planning– the cake. I LOVE, LOVE, LOVE wedding cake. At the same time, I despise fondue. What’s the point of ruining the cake just to make it look pretty? When perusing cake vendors, this paragraph on Merrill’s Desserts caught my eye:

Unlike many wedding cakes – made for looks rather than taste – ours are truly delicious. We bake all cakes fresh right here and frost them with a special buttercream icing. They cut and serve easily, and their moistness will delight you.

That put them in the running immediately. One day in September 2009, Mom, Carolyn, Ryan and I drove to Suffolk Virginia to meet Sandra Merrill. We tasted numerous flavors and unanimously confirmed– they were indeed “truly delicious”.

We flipped through design pictures to get an idea of what we wanted. Mom and Ryan were sharing a book and at once they stumbled upon a promising design.  It was a light blue cake with brown branches over it.  The cake also sported leaves and butterflies.

“I think it’s a home run with our venue,” Ryan noted.

SOLD! We changed the light blue icing to light green and that was that. We could scratch one wedding task off the list!

We did three tiers and picked a different flavor for each tier.  For the largest bottom tier, the “grown up” tier, we picked a yellow almond cake.  Sandra mentioned the raspberry filling makes the almond flavor really pop out, and we took her council.

The next largest tier was geared towards the kids.  Before we had met with Sandra Merrill, I solicited some flavor ideas from them.

One teenage boy didn’t have to think about the matter one bit.  “PEACH!” he declared.

“Uh….” I said, “I don’t think they have peach cake.”

“Yes they do!” the boy insisted.

Lo and behold, I didn’t see Peach on the flavor list.  But I did remember grocery shopping with one of the other boys when I let him pick out a cupcake mix for dessert.  He chose strawberry cake, which Sandra did have.  The second tier was strawberry with Bavarian creme.

The top tier was plain vanilla.

At the wedding, the cake itself seemed to go over well. BUT Ryan and I got booed!!! Apparently some spectators were less than pleased with our gentle manner of feeding each other. 🙂

I heard a surprisingly large number of people lament after the wedding that they “forgot” to get cake.  My sister, little Malena, my new sister-in-law to name a few.  That concept is so foreign to me.  As soon as I enter a wedding reception hall, I am monitoring the cake status.  When it is cut– I’m all over it, man!  You’ve got to have your priorities!

The loss of those guests was Hunter Street’s gain. Ryan and I had a lot of leftover cake. When we got back to our hotel room and decompressed after the day’s events, our appetites returned with a vengeance and we sat together, reveled in the quiet and feasted on wedding cake… with our bare hands! In our neighborhood, one kid was on punishment and had to miss the wedding. Meanwhile a whole other family was thwarted by a flat tire. Thanks to the leftover cake, they all still got to experience a little part of the wedding.

Ryan and I got to have some sizable extra helpings too! Each helping was as moist and as delicious as the first. In fact, one could accurately say, “truly delicious.”

Wedding – Caterer

When I moved from Blacksburg, I expected to miss the mountains. I expected to miss my friends. What I didn’t expect to miss was the food. In Blacksburg, I had a variety of options at my disposal. I’m afraid I took that for granted. When I moved to Elizabeth City, North Carolina, I found myself deprived of past staples. Elizabeth City doesn’t have Ethiopian food. It doesn’t have Indian food. It doesn’t have Thai. As a result, when we do venture out of Elizabeth City, that’s what I want. Ethiopian, Indian or Thai. Or Chic-Fil-A. We don’t have one of those either. 🙂

In the Virginia Beach/Norfolk area, Ryan quickly introduced me to Rajput Indian Cuisine. Absolutely delicious. Everything’s so, so good. I had found my new favorite restaurant. After that, anytime we were in the market for supper in that area, we were most likely going to Rajput.


Rajput – One Taste and You’re Hooked!

When we started down the road for wedding planning, I didn’t make the connection at first… that you could actually have your favorite restaurant cater. We looked through a listing of caterers and reviewed menus and plate costs. Nothing really stuck out and worse– the whole idea of a “real wedding” was becoming more and more intimidating. Linens and flatware and silverware. Oh gosh, don’t forget the cups. That’s a lot of trouble for a meal you aren’t particularly jazzed about.

Enter Rajput and Paul Chhabra. They do full service catering! Suddenly, not only did we have a meal to look forward to…. but we had knowledgeable, unflustered Paul Chhabra in our ranks. Ryan and I didn’t know what we were doing and that was okay because Paul did know what he was doing. He took care of all those details that were so scary– the linens, the plates, the forks, the cups. He had questions we never would have thought of. He had recommendations. He had suggestions. He had answers.

He also had vision. Three weeks before the wedding, Paul and I met with Jennifer Turlington at the Virginia Living Museum for a walk through. At one point Jennifer asked where I wanted the cake table.

“Uh…..” I had no clue.

“What about right there? In front of that painting?” Paul asked.

That’s where we put it. And wow. Our nature themed cake looked so lovely in front of that backdrop.

We ended up doing a buffet dinner featuring chicken, vegetarian and vegan options. I was concerned about the children and my boss Larry, so we added in a special selection for the more finicky souls. Greg Z went into the buffet line with a plan. “Save room on your plate.” He instructed his wife, “The best stuff on a buffet is always last!” Greg stayed true to his own strategy. He kept plenty of open space on his plate, only to discover the last item was… chicken fingers and french fries. 🙂

When I arrived at the reception, I could smell the aroma of delicious Rajput food. I saw Paul and I was overwhelmed with gratitude. For months, he had squelched all my worries, alleviated all my stress and then he delivered a fabulous meal. With that, I just had to give my caterer a hug!

Paul and I had another bonding moment. At the very end of the reception as everyone started to clean up, the DJ put on Slumdog Millionaire’s Jai Ho. A young man started to dance and put on a phenomenal show. A small crowd gathered and found themselves mesmorized. Paul stood next to me and we both watched with big smiles.

“That’s my son!” he said. He said that statement with pride. It was well-founded pride.

I truly believe Rajput was the turning point of our whole wedding planning process. I think it is very possible that if Rajput had not come on board, Ryan and I would have ended up with a very different, smaller event. With food to be excited about and all Paul’s expertise, we got to stay calm and relaxed and celebrate with so, so many more loved ones. Ahh, and I got Chicken Tikka Masala and decadent rice pudding to boot. 🙂

Wedding – Pi Favors

Shortly after the wedding, Ryan and I had a number of kids over to walk them through reinstalling their laptops. It was a lengthy process, so we put movies on in the background to provide some entertainment while the various progress bars ticked by. One of the movies we watched was “My Big Fat Greek Wedding”. From the lack of laughter, it was safe to say the movie only appealed to me and me only. There was an exception. Near the end of the film, you can see the family arguing in the kitchen.

“Hey!” I pointed at the screen, “LOOK!”

While the characters were arguing, they were also hard at work…. wrapping wedding favors in tulle.

And that I think was the only part of the movie we ALL got a kick out of. Wrapping things in tulle was a process we were intimately familiar with. In the two weeks before the wedding, Ryan, the neighborhood kids and I made 130 chocolate Pis using ThinkGeek Ice Cube Trays. We then placed 130 chocolates on 130 little squares of purple cardstock, wrapped them in tulle and tied them with a purple ribbon.

We selected Chocolate Pis as wedding favors because, well, Pi is pretty geeky.  It works with science and nature.  Plus Pi made a cameo in our ceremony.

A perfect circle contains an element of infinite complexity. Like circles, your rings have no beginning and no end and in the sacred tradition of marriage, rings have come to symbolize eternal love and the endless union of body, of mind, and spirit.  The circle, like marriage, was created to be forever, and endless. Just like the number “PI”  a number that goes on without end.  To quote Lisa Hoffman, “Marriage is like PI – natural, irrational, and VERY IMPORTANT.”

Interestingly enough, the Pi Chocolates had a lot of male contributers. Khalif and Tyrek helped squirt chocolate in the molds. Tyrek cut up purple ribbons. Khalif, Armani and Ryan all helped wrap.

Here’s another surprise. While Khalif, Ryan and I all struggled at tying the ribbons, Armani, who had seemed to be pretty indifferent about the wedding, waltzes in and puts us all to shame. He was by far the most effective wrapper! His innovation– twisting the tulle before tying.

Opportunity for Improvement
Our little Pis were cute and fitting, but there was an opportunity for improvement. When shopping for chocolate, I noted that almost all the selections included partially hydrogenated oils. That did not please me. So we used some Baker’s “Dipping Chocolate” instead.   It didn’t contain partially hydrogenated oils, but it melted a lot easier than the other chocolates.

This melting issue turned out to be a source of stress for me. The day before the wedding, Ryan and I loaded up two vehicles full of wedding stuff and headed up to Chesapeake Circuit Court to get our marriage license. It was a pretty warm day and as we headed into the Circuit Court, I was conscious that our vehicles would warm up. I was concerned. LUCKILY, that ginormous white wedding dress with its incredible amount of layers—- it made for perfect insulation! The chocolates not only survived that stop, but they also survived a late lunch as well.

My cousin Sam and my brother’s girlfriend Jacklyn were both helping with the wedding setup. I warned them about the easy melting. They knew to hold the little tulle contraptions by the top as they set the tables. And I do remembering mentioning to more than one person at the reception, “When you decide to eat your chocolate Pi, eat it fast!”

Alas, there was still a mishap. My friend, Tony, decided to put his chocolate Pi in his pocket to save for later.

Yeah, that didn’t quite work out as planned. He ended up with a pocket full of melted chocolate. 🙂

So the improvement I would recommend is to select a chocolate that wouldn’t melt when exposed to body heat as easily.

Fun with Grapefruits

This past weekend, we discovered the kitten Qubit fancies things from the compost pile. He started off by batting around the tops of carrots. He also proved to be fond of pouncing on old potatoes.

When Jacal and Jamontae came over, they learned that most of all, Qubit likes to chase grapefruits. The boys took turns throwing old grapefruits around the yard and the little black kitten would invariably sprint after it. Grapefruits are often part of diet regimens. Who knew they could promote exercise as well!

When one of those grapefruits hit the deck, look what Jamontae discovered. A Pac Man in “Nature”!!!

Recipe: Pawpaw Bread

With some of our pawpaws from the Dismal Swamp State Park, we made Pawpaw Bread. It’s like banana bread, just with pawpaws instead of banana. I thought it was delicious. Although I couldn’t tell the difference between it and normal banana bread, my mother said she could.

The recipe I used below is similar to the one in Better Homes and Garden’s New Cook Book (I add vanilla, put in more cinnamon and of, course, use pawpaws instead of bananas).

  • 4-5 pawpaws
  • 1 egg
  • 3/4 cup sugar
  • 1/4 cup olive oil
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon shredded lemon peel
  • 1 teaspoon vanilla
  • 1 1/2 cups all purpose flour
  • 1/2 cup chopped walnuts
  1. Preheat oven to 350 degrees
  2. After removing the numerous seeds, mash the pulp of the pawpaws with a fork.
  3. In a mixing bowl combine the pawpaws, the egg, the sugar and the olive oil.
  4. Mix in the baking soda, baking powder, cinnamon, lemon peel, vanilla and finally the flour.
  5. Stir in the walnuts.
  6. Pour in a loaf pan and bake 50 to 55 minutes or until a wooden toothpick inserted in the center comes out clean.

Last week, I was preparing to eat my evening dessert– a decadent sweet potato that was fresh out of the oven– when I noticed I had a FAIL just waiting to happen in my spice rack.
